    1/2 cup almonds
    2 tbsp Pure Maple Syrup
    1 tbsp Cider Vinegar
    2/3 cup water
    1/4 tsp ginger
    1 tsp sea salt
    1/2 tbsp Curry Powder

    1/2 cup chopped raw carrots
    8 cups chopped raw kale
    1/4 cup golden raisins
    1/4 cup chopped dried apricot


Place almonds and water into a blender. Blend for 2 minutes. Add remainder of dressing ingredients and blend until smooth. Add water for desired consistancy. Mix Salad ingredients in large bowl. Add dressing, mix salad well. Allow to sit before eating to allow dressing to soften the kale.
