    1 1/4 C graham cracker crumbs
    3 tbs sugar
    1/3 c melted butter

    3 8oz pkgs cream cheese softened
    3/4 c sugar
    1 tsp vanilla
    1 pkg (6 squares) baker's semi sweet baking chocolate, melted & cooled slightly
    3 eggs


the water bath will prevent the cake from cracking


preheat oven to 350
mix crumbs, melted butter, cocoa powder & 3 tbs sugar, press into bottom of a 9in spring form pan. set aside.
beat cream cheese until smooth, add sugar vanilla, blend well. add melted chocolate, mix well. add eggs 1 at a time, mixing on low speed after each addition just until blended. Pour over crust. Bake in a water bath for 55-60 min, or until center is set. run a knife around rim of pan to loosen cake. cool to room temp, then refrigerate until ready to serve.
