    2 heads cauliflower
    1 32 oz container low sodium fat free chicken broth
    1 32 oz container Unsweetened Almond Milk
    2T Extra Virgin Olive oil
    1 med chicken breast, cooked and cubed
    8 oz ham steak, cubed
    8 oz swiss cheese, cubed
    2 T chia seeds


core and chop cauliflower.
Boil in chicken broth until soft.
Blend in food processor until pureed.
Pour cualiflower puree into a large soup pot.
Pour in Almond milk
Add Olive Oil and Chia seeds.
Add Chicken, Ham, and swiss.
Cook over Med Heat until cheese is melted, stirring often.

Serving Size: makes 12 1-cup servings
