Ingredients

    Avocado halves
    Eggs (whole or whites)
    Parmesan
    Salt,pepper, seasoning
    (I used sea salt, pepper and garlic powder)

Tips

I'm going to start playing with different versions of avocado bakes, such as with sauteed veggies inside, rice mixtures, salsas....! Also trying different cheeses!


Directions

Halve avocados. Scoop out just enough avocado to make some room, and lay cut side up in baking pan or sheet. Crack one egg into each "boat"...it's okay for it to overflow a little bit, the egg will bake up crisp on the pan! I spray the tops with olive oil cooking spray for browning and flavor. Sprinkle seasoning of choice and grated parmesan over the tops. Bake at 400C; start checking after 10 minutes. The egg white should be set and opaque, and the yolk can be runny or set like over medium or a soft boil.

    I used the scooped avocado with some salsa to garnish. We'll have it again. Very easy to make. Oh and I cooked it at 400 F. - 7/6/13

    Excellent idea! Feta crumbles work well too...I ended up going with my favorite temp, 425...that is what I use to roast vegetables too. Glad you enjoyed it!
