Introduction

I am doing gluten, corn & preservative free right now. This recipe is my usual--tweeked to fit my diet needs now. Removed corn, cheese, premade taco seasoning. I actually used a fahita season mix that had no corn, soy or maltodextrin to fit my diet. I am doing gluten, corn & preservative free right now. Number of Servings: 10

Ingredients

    1 lb of ground beef to be browned
    1 medium onion, diced
    ---brown together in the pot
    --drain fat after cooked
    ADD:
    2 cans diced tomatoes
    1 can black beans----drain and rinse all beans first
    1 can kidney beans
    1 can pinto or navy beans

    sprinkle in your taco or fahita seasonings.

    simmer on medium-low for 45 minutes so items soften and flavors meld together.

    If your diet allows adding in each bowl:
    crumbled Dorito's or Frito's
    sour cream dallop
    shredded cheddar cheese

    Enjoy!

    Even my picky hubby who doesn't think he likes beans loves this soup!

Tips

Use a larger pot like a stock pot or dutch oven size.
Picky husband approved--thinks he doesn't like beans.
Can add crumbled Dorito's, sour cream or shredded cheddar cheese to each bowl if desired.


Directions

brown the ground beef and onions until done. Drain fat and then add remaining ingredients to the pot. Stir well and let simmer on med-low for 30-45 minutes to soften everything and meld the flavors.
If your able to adding a bit of sour cream or shredded cheese to this in each bowl is great.
Also crumbled Dorito or Frito's as well.
