    1 1 /2 lb roast... visible fat trimmed

    1 onion, cut in slices
    1 celery stalk cut in chunks
    1 cup baby carrots cut in chunks
    1 pkg mushrooms, cut in chunks

    1 bottle of red wine (not super expensive stuff, something you'd actually drink)


In a large pot, turn heat on stove to high, and spray with a little olive oil spray.

add roast and brown on all sides (takes about 2 -3 minutes)

Remove roast and add vegetables.. and sautee a little bit

Add roast on top of vegetables and add bottle of wine... add water/vegetable stock/beef stock/chicken stock to cover if needed.

Add a tbs of thyme, oregano and a bay leaf...

bring to a boil - and simmer for 4 -5 hours or in a 300 degree oven for 5 hours..

Remove roast and mash the veggies into the wine for the most outrageous gravy you'll ever have -

Serve with egg noodes, shiritake noodes (the gravy is strong enough to kill the after taste of the shiritake) or mashed potatoes...

It's even better the next day on a sandwich..
