Ingredients

1 medium celery root (about 24oz)
2 tbsp sea salt
2 tbsp whole-berry cranberry sauce
3 tbsp maple syrup
Directions
Preheat oven to 350F.
Trim, peel and cut celery root into long strips (about the width of fries).
Toss with salt and add to a lightly sprayed baking sheet.
Roast for 40 minutes, flipping halfway through.
Increase heat to 400˚F.
Combine cranberry sauce and syrup, drizzle over roasted strips.
Roast for further 10 minutes, and serve immediately.
