    1 46-oz, botlle V8 Low Sodium Vegetable Juice
    32 oz. beef broth
    1 16-oz bag Westpac Vegetable Soup Mix (frozen)
    1 16-oz bag Westpac Ranchero Blend (frozen)
    1 tsp. ground cumin
    1/4 tsp. chipotle chile powder
    3 cups organic 100% whole wheat penne rigate


In a large stock pot, combine V8 juice and beef broth. Add frozen vegetable soup mix and ranchero blend vegetables and stir well. Season with ground cumin and chipotle chile powder. Stir to blend spices. cook on medium until soup beginst to boil. Add pasta and stir to blend. Simmer for 30 minutes. Taste to make sure pasta is cooked to the texture you desire and adjust seasonings, if necessary.

Makes about 16 1-cup servings.
