    12 corn tortillas
    9 oz. chicken breast, no skin or bone
    1/4 cup fresh onion, minced
    1 tsp garlic powder
    Salt and pepper to taste
    1/2 can Old El Paso chopped green chilies
    8 oz. Mexican cheese, queso fresco or anejo
    10 oz. can Old El Paso Green Chili enchilada sauce
    1/4 cup shredded cheddar cheese
    1 large or 2 small fresh roma tomatoes, chopped


Cut chicken into small pieces. Cook in a non-stick skillet with onion until juices run clear. Add garlic powder and canned chilies. Cook 1-2 minutes more. Set aside.

Spray 9x13 baking pan with cooking spray. Layer four tortillas across bottom. Follow with a layer of chicken, 1/3 of the enchilada sauce and 1/2 of the Mexican cheese. Repeat: tortillas, chicken, sauce, cheese. Lay remaining four tortillas on top. Top with remaining sauce, chopped tomatoes and cheddar cheese.

Bake in a 375-degree oven for 40 minutes.
