A cup of chocolatey deliciousness for those "gotta have chocolate" moments! I have substituted Coconut Milk for the butter found in other versions, which makes this version dairy free, as well as low carb. Ingredients

    1 egg, beaten
    3 TBL of Thai Kitchen full-fat coconut milk, or comparable brand
    1 tsp of Nectresse sweetener, or Splenda
    1/2 tsp of vanilla extract (Optional)
    1/4 tsp of baking powder
    2 TBL of unsweetened cocoa powder


Tips

Top with Redi-whip if desired.


Directions

Mix all and mix well. Pour into a microwave-proof mug (spray the inside of mug with Pam for easy cleanup). Microwave for 1 minute.
