    2 Cucumbers - halved and sliced
    1/4 cup onion - chopped
    3 Plum Tomatoes - Chopped
    1/2 Fresh Lemon Juice
    1 Tsp Fresh Lemon Zest
    7 Stalks of Celery - Chopped
    1/3 cup Parsley - Chopped
    2 Cloves of Fresh Garlic - Minced
    1 Tsp of Olive Oil
    1 Tbsp of Water
    2 tsp of Kosher Salt
    2 tsp of Fresh Ground Pepper


Very Refreshing Salad! Good on its own or with a diced chicken breast.


1. Combine all chopped vegetables into a bowl.
2. Add Salt and Pepper
3. Combine Juice of Lemon, Lemon Zest, Water and Olive Oil, Parsley and minced Garlic then pour over salad and mix well.
Refrigerate for 1 hour before serving
