    2 cups hot tap water
    1/2 cup whey
    2 Tbls honey
    1 tbls salt
    2 beaten eggs
    2 tbls dry active yeast
    1/2 cup wheat gluten
    2 cups corn flour or cornmeal
    1 cup unsweatened applesauce
    3 cups whole wheat flour.


Makes 2 loaves. Combine in bread mixer: Hot water, whey, salt, beaten eggs, and honey. Add yeast, mix and let stand for 10 minutes. The mixture should look foamy. Add cornmeal and applesauce and mix well. gradually add whole wheat flour. The mixture will be thinner than most bread doughs. allow to rise until double (about 1 hour and stir down. Spray bread pan and pour the mixture in. Allow to double again. Bake at 350* for 35- 40 minutes or until nicely browned. brush the tops with butter. Turn out the pans after 20 minutes.
