    2 cups chicken breast, chopped
    8 oz. whole wheat penne
    3 c. Chopped kale
    6 grape tomatoes, halved
    4 tbsp. Parmesan cheese, divided
    1tbsp. EVOO
    2 tbsp. balsamic vinegar (add more to taste if desired)
    1 tsp. garlic, minced
    1/4 c. Walnut pieces
    2 tbsp. chopped green onion
    Salt and pepper to taste


You can also make this with radicchio, spinach, or broccoli and it is just as yummy!


Boil penne. Save 1/8 cup cooking liquid and drain the rest. Add the reserved liquid back into the pot and add kale, tomatoes, and garlic; cook for 1-2 minutes until kale begins to wilt.badd chicken and penne. Add olive oil balsamic vinegar, half of the cheese and some salt and pepper to taste and toss until heated through and well-mixed. Serve topped with the rest of the cheese, walnuts, and onions.
