    Wildwood- Spinach Fettuccine, 14 oz
    Cauliflower, raw, 4 cup
    Milk, nonfat (skim milk), 1 cup
    Olive Oil, 4 1tsp
    Reisling, 4 oz
    Onions, raw, 1 cup, chopped
    Nutmeg, ground, .25 tbsp
    Parmesan (Fresh), 4 oz
    Parsley, dried, 4 tbsp


Prepare pasta according to directions and set aside.
Cook Cauliflower and drain.
Puree Cauliflower with 1 cup milk and set aside
Brown Onion with olive oil and deglaze with wine
Add cauliflower mixture to onion mixture and ass about 1/4 cup pasta water
Add ground nutmeg and parsley cook for about 5 minutes.
Add drained noodles and toss together.
Toss with Parmesan and serve

Serving Size: Makes 5 1/2 cup servings
