    1 stick butter, unsalted
    1/2 cup chopped onion
    2 t chopped garlic

    1/4 cup flour

    5 cups 2% milk, slightly warmed

    1 lb. frozen chopped broccoli, thawed and strained

    2 cups shredded cheddar cheese


** stir the soup every 3 - 4 minutes to prevent browning on the bottom of the pot **


- melt butter over medium-high heat in large pot
- add onion and garlic
- sprinkle flour over butter mixture
- whisk until smooth
- let cook 5-8 minutes, until light blond
- reduce to medium-low heat
- slowly add warmed milk, one cup at a time
- whisk each cup of milk in thoroughly
- after all milk is incorporated, add broccoli
- stir and let simmer for 10 minutes
- add shredded cheese and stir
- let simmer for an additional 10 minutes

* ready to serve! *
