Introduction

I love spicy Mexican rice, but I was looking for something with less tomato-taste, and more heat in the beef. I love spicy Mexican rice, but I was looking for something with less tomato-taste, and more heat in the beef.
Number of Servings: 6

Ingredients

    1 lb. lean hamburger.
    1/2 cup diced onion
    1 pkg taco seasoning or your own concoction. I use chili powder, smoked paprika, cumin, and black pepper.
    1/2 cup salsa
    1 cup white rice
    2.5 cups water

Tips

The packaged taco seasonings are high in sodium. Try making your own taco mix!


Directions

Brown the hamburger and onion. Drain the beef and add the taco seasoning, salsa, and water--use 1 cup of water if you are using your own mix. Simmer 15-20 minutes. Add the cup of rice and the remaining water. You may be able to omit some of the water. Cook until the rice absorbs the moisture--about 20-25 minutes.

Serving Size: Makes 4-6 servings
