    Low Carb/High Fiber whole wheat tortilla
    black beans
    no fat refried beans
    cheddar jack cheese
    green chili enchilada sauce


Boil boneless/skinless chicken breasts until no longer pink. Shred chicken with a fork. Use a spatula to coat the bottom of the tortilla with refried beans. Spoon 1/2 cup of black beans, 2 T of cheese and 1/4 cup shredded chicken down the middle of each tortilla. Roll tortilla and place in pan. Once all 8 tortillas are rolled and in pan, pour enchilada sauce on top. Back 350 degrees for 35 minutes.
