    3 cups egg whites
    6 whole eggs (optional, if not using add 1 more cup egg whites)
    5 links Jennie O Sweet Italian Sausage
    1-2 cups fresh cooked spinach
    12 grape tomatoes slice in half

cook sausage in a medium pan with a tiny bit of oil, cover and let brown. While sausage is cooking prepare your spinach and then steam in water and sea salt. Halve the grape tomatoes and deseed if seeds bother you. Take sausage out and drain on paper towel to let cool a bit. Drain spinach and run cold water over it. While spinach is draining, slice the sausage and add to a large saute pan to brown. While sausage is cooking squeeze spinach to get rid of additional water and then place on paper towel. Add eggs to sausage and once they begin to set add spinach, tomatoes, sea salt and pepper. Cook until set.
