    2 cups spinach
    1 small yellow onion
    1/4 c fresh basil
    sage, oregano and garlic pepper to taste
    5 large eggs
    1/4 c skim milk
    1/2 c shredded asiago cheese


Coat medium skillet with cooking spray. Sautee vegetables and spices and soft and fragrant. Whisk eggs and milk together and pour over vegetables. Heat on medium until bottom is just set. Put pan under broiler until top is set. Sprinkle cheese on top and return to broiler until cheese is just melted. Cut into six wedges and serve warm.
