    For the dressing:
    1.5 tbsp extra virgin olive oil
    0.5 tbsp balsamic vinegar
    1 tbsp maple syrup

    For the salad
    2 cups fresh baby spinach
    1 tbsp pine nuts
    25 grams blue cheese crumbled


Can substitute pine nuts for slivered almonds and maple syrup for 1 teaspoon of honey.


Put all dressing ingredients in the salad bowl and whisk until combined. Add the spinach leaves to the bowl and toss well in orde to combine. Add the pine nuts and the crumbled blue cheese. Season with a little bit of salt and pepper to taste.
