    1 whole large eggplant (unpeeled
    1 cup whole wheat bread crumbs
    1/2 cup grated parmesan cheese
    Italian seasoning
    pam cooking spray


cut eggplant in half and place cut side up in a flat pan with about 2" of water. Bring to a boil and cook for 10-15 minutes covered until soft. Remove with a slotted spoon and press out water. Mix drained eggplant with remaining ingredients using immersion blender or food processer. Form into balls or patties place on baking sheet, spray with Pam and bake at 400 for 35-40 minutes.
