    2 large sweet potatoes
    1 medium onion, diced
    1 medium green pepper, diced
    2 cloves garlic, minced
    1 can garbanzo beans, drained and rinsed
    1 tbsp curry powder
    salt & pepper to taste
    cooking spray


Preheat over to 400 degrees.

Wash sweet potatoes, poke with a fork, place on cooking sheet and bake for approximately one hour, until tender. Remove from oven and let cool.

Over low to medium heat, cook onion, garlic and peppers, using cooking spray to avoid extra fat. Season with salt, pepper, rosemary, cumin, etc to taste. Once the onions are translucent, add garbanzo beans and cook until heated through.

Slice cooled sweet potatoes in half, scoop out inside, leaving enough intact for skin to hold its shape. Mash with curry powder and as much veggie broth as needed to get smooth consistency. Stir in veggie mixture, return to skins.

Bake 10-15 minutes more at 375 degrees
