Introduction

Ingredients

    Nonfat Vanilla Greek Yogurt (8 oz)
    Old fashioned oats, dry, .50 cup
    Three Berry Mix, 1 cup
    Spinach, fresh leaves, .75 cup
    Grape Juice, .75 cup
    Egg, fresh, whole, raw, 2 large
    Protein powder, whey protein Vanilla (1 scoop)
    Flax Seed Meal (ground flax), .50 cup
    Whole grain baking mix, 2 cup

Tips

I push one whole berry into the top of each one before baking for 15 minutes.


Directions

Heat oven to 350 and spray your muffin tin. Mix yogurt and oats in a large mixing bowl and leave to soak. In blender, beat eggs, spinach, protein powder, juice and berries into a puree. Add to mixing bowl then fold in baking mix and ground flax.

Serving Size: makes 12 medium muffins
