    1/2 cup whole wheat couscous
    1 teaspoon olive oil
    2 (1-inch-thick) bone-in pork chops
    1/2 teaspoon salt
    1/2 teaspoon pepper


Serve with Apple and Arugula Salad


Preheat oven to 400 degrees. Cook couscous
according to package directions. Heat oil in
large ovenproof skillet over medium heat.
Season pork chops with salt and pepper. Add
pork chops to skillet; cook 3 minutes per side or
until browned. Transfer skillet to oven; bake 10
minutes or until a thermometer reads 145
degrees. Let stand 3 minutes; serve pork chops
over couscous.
