Ingredients

    - 3 cups water
    - 1⁄2 onion, cut in 1⁄2-inch slices
    - 5 tablespoons cider vinegar
    - 2 cloves garlic, sliced
    - 1⁄4 cup tomato sauce
    - 1 teaspoon apple juice concentrate
    - 1⁄4 teaspoon salt
    - 710 medium-size dried chipotle chiles, stemmed and slit lengthwise

Directions

1. Place all the ingredients in a medium-size saucepan and heat over medium- high heat; bring to a boil.

2. Reduce heat to low, cover pan, and simmer for 6090 minutes or until the chiles are soft and the liquid is reduced to about 1 cup.
