Greens and Cheeese together Greens and Cheeese together

    1 lb. chopped collrd greens
    1 (14 oz.) can low-sodium reduced fat chicken broth
    1 cup water
    1 /2 cups egg substitute (or 6 eggs)
    2 cups fat-free milk
    1 6 oz. package Canadian bacon, diced
    1/2 cup diced onion
    1 tsp salt
    1/2 tsp nutmeg
    1/ 2 cup reduced fat shredded mozzarella cheese
    1/2 cup fat-free shrdded mozzarella cheese


Yields 12 servings (6 per pie)

In a medium sauce pan bring chicken broth and water to a boil. Ad the collards, diced onion and diced Canadian bacon; cook 20 minutes and drain well.

While the collards are cooking beat the egg substitute (or eggs), milk, salt, nutmg and cheese together.

Combine the cooked collards mixture with the egg mixture. Pour the mixture into 2 pie plates sprayed wih cooking spray. Bke at 350 degrees For 45 minutes or until a knife inserted in center comes out clean.

Recipe is a variation of one found on Nature's Greens Collards Greens, 1 lb size.
