    2 cups of Pinto beans, sorted and soaked overnight
    2 Tbls vegetable oil, lard or bacon grease
    2 cups of rice.


Rinse the soaked beans in cold water. Cover with water and bring to a boil. reduce heat and simmer for 2-3 hours adding water as needed to keep the beans covered.
30 minutes before dinner put oil or fat in a large skillet and heat. When hot add rice and stir until the rice is lightly browned. Add water from the beans and cook for 20 minutes keeping the rice at a low simmer. Add bean water as needed. When the rice is fluffy and soft you are done. This will take about 20 minutes.
