Ingredients

1/2 red onion, diced
2 red bell peppers, diced
Baby Bella mushrooms, sliced
garlic
cumin
chili powder
salt & pepper
2 jalapeno peppers, diced
1 # ground chicken
1 can black beans, rinsed
1 can reduced sodium corn, drained
1 can Rotel tomatoes
4 10" Spinach Tortillas
2 cups reduced Mexican cheese blend
Tips
Allow to sit for 10 minutes before slicing. Serve with low fat sour cream if desired. Sour cream not included in nutrition values.
Directions
Saute onion, peppers & mushrooms. Add garlic and seasonings. Add chicken and cook until no pink remains. Add Rotel tomatoes and refried beans.
Place a tortilla at the bottom of 2 10" pie plates. Add layer of cooked mixture. Add another tortilla, the corn and beans and top with cheese. Bake at 350 for 20-30 minutes.
1 serving = 1/4 of pie.
