    1 lb ground beef
    1/2 cup yellow sweet corn frozen
    1 cup onion chopped
    2 tbspn canola oil
    16 corn tortillas
    5 huajillo chillies
    1/2 lb part skim mozzarella cheese
    1 tspn each -paprika, chili powder, cayenne pepper & cumin.


Brown beef with 3/4 cp onions and seasonings, add corn in skillet.
Blend chillies, with 1/4 cp onion, garlic and cumin.
Warm tortillas on skillet and submerge in chilli mixture.
Put in baking dish and roll into enchiladas.
Pour remaining chilli mixture on top of enchiladas and sprinkle cheese on top.
Broil for 10 min.
