Ingredients

    1 package sugar free yellow cake mix
    1 can undrained mandarin oranges, 15 oz
    4 egg whites
    1/2 cup unsweetened applesauce

    Topping:
    1 20 oz. can undrained crushed pineapple
    1 package sugar free vanilla instant pudding mix
    8 0z. fat free cool whip

Directions

Beat dry cake mix, oranges with juice, egg whites and applesauce for 2 minutes. Pour into 9x13 pan coated with baking spray.
Bake at 350 for 25-30 minutes. Cool on wire rack.

In bowl, combine pineapple, with juice, and pudding mix. Fold in whipped topping just until blended and spread over cooled cake. Refrigerate at least 1 hour before serving.
