Ingredients
Green bell peppers - 6 medium
Lean ground beef, 85% - two pounds
Egg - 1 large
Minute Rice - 2 cups
Onion soup mix - 2 envelopes
Water - 1 cup
Hunt's Italian Sausage tomato sauce - 2-24 ounce cans
Directions
Cut off tops of green peppers and scoop out seeds. Discard tops and seeds. Wash peppers and set aside.
In large bowl, mix ground beef, egg, Minute Rice and onion soup mix together well with hands. Divide this mix evenly into 6 balls.
Stuff each meatball into a green pepper. Repeat process until all peppers are stuffed. Place peppers into a large pot. Pour tomato sauce over the peppers. Add one cup of water to pot.
Cover with lid and simmer on medium-low heat for approximately 90 minutes. (Slow cooking is the key here.) Stir gently occasionally to ensure sauce/peppers don't burn.
Serving Size: Makes 6 stuffed peppers.
