Introduction

Not your "usual" boring carrot soup. :-) Not your "usual" boring carrot soup. :-)
Number of Servings: 6

Ingredients

    4 cups chicken broth or vegetable broth
    2 lbs carrots, peeled and chopped
    2 onions chopped
    ginger root, about 1 tbsp grated or powdered equivalent
    5 cloves garlic, or powdered equivalent
    1/4 cup white miso paste
    2 tbsp sesame oil

Tips

Garnish with sliced green onions.


Directions

Cook chopped onion, carrots, garlic and ginger in a pot for about 30 minutes, until vegetables are tender.

Using an immersion blender or in batches in a blender, puree until smooth. While in the blender, put in miso paste and sesame oil just at the end and mix. Taste and add garlic, pepper ginger or miso paste if needed (and add to nutrition information). With the miso, it's unlikely you'll need any salt but add if you do.

Return all to pot and heat through.

Serving Size: Makes 6 servings of about 1.5 cups
