Introduction

I've tried many different bread machine breads, and this one is my hands-down favourite for sandwiches, toast, and general snacking. I've tried many different bread machine breads, and this one is my hands-down favourite for sandwiches, toast, and general snacking.

Ingredients

    1 1/4 cups almond milk (or rice milk)*
    2 tsp honey
    1 1/2 tbsp coconut oil**
    2 2/3 unbleached white flour
    1 tsp salt
    1 1/2 tsp quick rise yeast

Tips

*MILK: The rice milk will make a sweeter loaf. I imagine you could also use soy milk, but I've not tried it.

**OIL: Coconut oil can be fragrant or deodorized. The regular oil makes a tasty loaf, good for snacking but not as good for sandwiches. I'd recommend the deodorized kind. Or, you could try Earth Balance buttery spread in place of the oil. I've also used regular margarine, as well, but margarine contains dairy.


Directions

Not every bread machine has the same user guidelines, but this is how I make this bread in my machine.

Stir almond milk and honey together in bread machine pan. Add coconut oil. Sprinkle flour over top. Sprinkle salt on top of flour. Make a shallow well in the flour, and pour the yeast in.

If applicable, select the most basic bread setting, light crust, and 1.5 lb loaf. When finished, remove from bread pan to cooling rack. I let mine cool about 10 min for warm snacking bread, or leave it overnight before cutting in the morning for sandwiches.

Serving Size: Makes about 12 slices.
