Number of Servings: 20


    3 eggs
    2 cups sugar
    1 cup OR 20 oz. can crushed pineapple, drained.
    1 tsp cinnamon
    1 cup shredded carrots
    1 tsp. vanilla
    1/4 or more crushed walnuts
    2 cups flour
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 cup vegetable oil
    1 cup or less or more white raisins

    1 stick butter - softened
    1 and 1/2 tsp vanills
    1 8 oz. cream cheese
    1 box confection sugar (1 lb.)


350 degree oven - 1 hour - Angel cake pan or bundt pan
(I use bundt)
grease and flour bundt pan well
Cool cake completely and loosen cake from middle and sides with knife so it doesn't stick.

Serving Size: 18-20 pieces
