    1 pound tomatillos
    1 large onion
    1 avocado
    4 jalapenos (more or less to taste)
    2 banana peppers
    5 cloves garlic (more or less to taste)
    Juice from half a lemon
    4 tbl. Olive oil
    salt and pepper to taste


I kind of wing this recipe to suit our love of spicy things and garlic. Feel free to tone it down to your own preference.


Quarter the tomatillos and onion. Place on a baking sheet with garlic and whole peppers. Drizzle with olive oil.
Roast at 425 until deep color develops, turning every 5 minutes or so. This could take about 15 minutes.

Take peppers off baking sheet and put aside to cool. Place the rest of the ingredients (roasted and not) in a blender or food processor.

When peppers are cool enough to handle, peel off skin and remove seeds and stems. Place in processor. Mix it up. Salt and pepper to taste.

Serving Size: 8 1/4 cup servings (approximately)
