Ingredients

    1 whole mango seeded, peeled & chopped
    1 kirby cucumber- small diced pieces (salad cucumber)
    Juice of lime
    small raw red onion, diced
    Cilantro (optional)
    1 roasted jalapeno, diced (remove seeds/membrane for less spicy, use 1/2 jalapeno for even less spice)

Directions

Combine all ingredients, mix and refrigerate for several hours before serving.

Serving Size: Makes 10 ~ 1/4 cup servings
