    250 grams almonds (grind in thermomix until consistency of almond flour, use blanched almonds)
    50 grams rapadura
    2 ts baking powder
    pinch of salt
    1/4 tsp of cinnamon
    2 lemons zested
    130 grams plain yoghurt
    5 tbsp poppyseeds
    3 eggs
    100 grams extra virgin olive oil


Tastes nice served with a passionfruit or vanilla yoghurt, makes it a good after gym snack, high protein due to almonds and eggs, along with the calcium in the yoghurt.


pre heat oven to 180 degrees
add the almonds, grind until flour like.

Add rapadura, baking powder, cinnamon, pinch of salt and lemon zest to the TM bowl, on SPEED 9, for 50 seconds.

Add the yoghurt, olive oil, and eggs SPEED 4, 40 seconds.

Bake for 30-35 minutes
