Ingredients

    .5 c Egg substitute
    1 oz. Smoked salmon, diced
    .5 oz. Neufchatel cheese
    .5 plum tomato, diced
    .25 c red onion, diced
    1 T Capers, drained
    Cooking spray

Tips

This recipe was inspired by a dish at Yolk in Chicago, IL. If you are in the city, it is worth the visit.


Directions

Spray pan. Heat and add eggs. Scramble eggs, when half set, add onions and tomato. When dry (to taste) add salmon and neufchâtel. Turn down heat and let dish sit to warm salmon and cheese.

Plate and top with capers.
