    3 cups Chicken Stock
    2 Boneless Skinless Chicken Breasts, cooked & diced
    1 medium Onion, chopped
    3 medium Carrots, sliced
    3 medium Potatoes, peeled and cubed
    1 Tbsp dried Parsley
    1/2 tsp Salt
    1/4 tsp Pepper
    8 oz Cream Cheese, cubed


You can substitute cooked rice or noodles for the potatoes, if you want to add raw rice or noodles you must adjust liquid and cooking time. Have used fresh or frozen broccoli instead the carrots.


Pour olive oil in soup pot, add onions and saute unitl transparent. Add 2 cups of stock, seasonings, potatoes and carrots. Bring to a boil, reduce heat and simmer until vegetables are tender. While that is simmering, in a saucepan, heat remaining 1 cup of stock. Add cream cheese cubes, stir frequently until cheese is melted. Add this to the vegetables when they are tender.
