Ingredients

    * Shallots, 2.5 tbsp chopped
    * Garlic, 1 clove
    * Pepper, red or cayenne, .125 tsp
    * Thyme, ground, 1 tsp
    * Lime Juice, 1 lime yields
    * *Grey Poupon Dijon Mustard, 3 tsp
    * Soy sauce (shoyu), low sodium, 2 tbsp
    * *Sweet Cooking Rice Wine, 2 tbsp
    * White Wine, 2 fl oz
    * *Honey, .5 tbsp
    * Ginger Root, 6 tsp


    * Chicken Breast, no skin, 10 ounces
    * Spinach Fettucini, 2 oz
    * Chicken stock, home-prepared, .5 cup

    * *Summer Squash, 1 medium
    * Green Peppers (bell peppers), .5 cup, strips
    * Broccoli, fresh, 1 cup, chopped
    * Mushrooms, fresh, .25 cup, pieces or slices

Directions

Blend first section of ingredients in blender. Use half to marinade chicken in for at least 30 minutes. Then bake in marinade at 350 untill 165 degrees.

Cook pasta per directions.

Cook veggies until wilted in chicken juices.

Put drained, cooked pasta back in pot with chicken stock at lowest heat. Add veggies and remaining marinade. Top with sliced chicken breast.
