Homemade Dahl Lentils

1 pound brown lentils
5 cloves garlic
1 chopped onion
1 chopped red bell pepper
6 cups vegetable broth
Spices: cumin, coriander, garham masala, chili powder, dash cinnamon, tumeric, mustard seed, paprika, salt, pepper
This was an experiment I tried one day when I was craving Indian dahl. I didn't add any oil and it was ok but traditionally I think ghee (clarified butter) is used. Mixing in a bit of goat cheese would probably be yummy but then not vegan.
Saute onions and garlic first, or just throw it all in the slow cooker. I cooked it overnight on low in a 4 qt coker, then blended about half to make it creamy. It made quite a lot. Add salt to taste after cooking and serve over brown rice, quinoa or eat on its own.
