Introduction

Ingredients

    16 oz. Bob Evans Savory Sage Sausage, cooked
    eggplant, peeled, diced and cooked
    2 large eggs
    1 1/2 cups flour
    shredded cheese
    olive oil for cooking

Tips

You should be able to raise mixture on spoon and it will slowly fall off. Can use more flour if you want to shape patties for cooking. Can also make in oven or broiler and save calories by not using the oil.


Directions

Peel and dice eggplant cook in water until soft and can be mashed, drain well.
Meanwhile cook sausage and crumble, when done drain well. Mix eggplant and sausage together and cool.
Mix egg and cheese (if using) into eggplant and sausage mixture and add enough flour to make a thick mixture. Drop by spoonful on greased skillet and brown on each side. Only takes a few minutes per side.

Serving Size: makes 12 small patties
