    2 bunches raw broccoli, chopped
    1 med head cauliflower, chopped
    1/2 c sweet red bell pepper, chopped
    1/2 c green bell pepper, chopped
    1 large tomato, chopped
    1/2 c red onion, chopped
    1/2 c sliced green olives (about 20 olives)
    3/4 c 2% shredded cheddar
    1 1/2 c nonfat greek yogurt
    1 envelope ranch dressing mix


Blanch broccoli and cauliflower. Chop. Mix all veggies in a large bowl. Combine yogurt with ranch dressing mix. Add to veggies and toss until well coated. Refrigerate for at least 4 hours. serve.
