Introduction

Ingredients

    1 medium cauliflower, chopped, stem removed
    1 onion, diced
    1 tbsp margarine or salted butter
    1 1/2 cup vegetable broth
    1 1/2 cup skim milk
    1 cup shredded cheddar cheese
    Salt and pepper to taste

Directions

In a large soup pan, saute the onions until they are soft and translucent. Add in the broth, milk, and cauliflower and bring to a boil. Reduce heat and cover, simmering until the cauliflower is soft. Next, using a traditional 'mashed potato' masher, mash the vegetables until the soup is creamy and slightly lumpy. (If a smoother soup is desired, whirl in a food processor in batches.) Lastly, add the cheddar cheese and stir until it melts. Add salt and pepper to taste, and serve warm. Enjoy!

    very good, and very easy! I used 2 c each broth & skim milk, and substituted velveeta for the cheddar. A litle pepper and paprika to give it pizazz!! - 11/24/07
