    1/2 C. canned Green Chilies
    8 egg whites
    3 egg yolks
    1/4 C. hot pepper cheese, shredded
    1/4 C. cheddar cheese, shredded
    6 Tumaro's Low in Carbs Multi Grain Tortillas


Separate egg whites from yolks. (discard or store 5 of the yolks)
Whip egg whites until stiff.
Beat 3 yolks until smooth. Fold yolks into whites. Season with salt and pepper.
Combine cheeses together.
Grease a 9x13-inch casserole dish.
Spread small amount of egg mixture in dish.
Split open green chilies and layer on top of eggs in dish.
Sprinkle cheese on top.
Spread some more egg on top of that.
Repeat layers until all ingredients are gone (finish with egg).
Bake for 25 minutes @ 350 or until golden brown.
Fill tortillas with egg mixture.
Serve or wrap up and freeze until ready to use.
