    4 bonless, skinless chickn breast halves
    2/3 cup water
    2 tablespoons Butter Buds
    2 cups Stove Top Stuffing (dry, chicken flavor)
    1 can (8 oz) crushed pineapple, undrained
    2 tablespoons brown sugar
    2 tablespoons vinegar
    1/4 teaspoon ground ginger


Preheat oven to 400.

Lay chicken breasts on flat surface and pound with meat mallet (or rolling pin) to 1/4" thickness.

Mix hot water and butter buds in medium bowl, Stir in stuffing and half the pinapple and juice. Stir until well blended. Spoon stuffing mix evenly over chicken and roll each breast up tightly starting with long end then secure with toothpicks. Place seam side down in greased (non-stick spray) baking dish. Place any leftover stuffing in the middle of pan.

Mix remaining pinapple and juice, brown sugar, vinegar and brown sugar and spoon over chicken. Bake uncovered without turning for 30-40 minutes or until tender.

Makes 4 servings - one stuffed chicken breast per person.
