    1 cup skim milk
    1 package active dry yeast
    3 Tblsp packed light brown sugar
    2 Tblsp butter (room temperature)
    2 1/4 cups all-purpose flour
    Plus an additional 1/2 cup flour as needed.

    1/3 cup baking soda
    2 cups warm water
    Coarse salt to taste
    6 - 8 Tblsp melted butter


Warm milk in microwave until 110 degrees. Add yeast and whisk until yeast is dissolved. Allow to stand for 5 minutes. Transfer into mixer bowl that has been warmed with hot water. Add brown sugar, 2 Tblsp butter, 1/2 cup flour and salt. Whisk until blended. Switch to dough hook and add remaining 1 1/4 cups flour. Knead dough until elastic. Mix in the additional 1/2 cup flour as needed until dough pulls away from sides of bowl. Cover bowl with plastic wrap and hand towel and allow to rise in warm place until doubled in size (about 1 hour). Preheat oven to 375 degrees. Mix baking soda and warm water in shallow pan. Punch dough down to release air pockets. Form dough into small 1 inch x 1/2 inch pieces. Fully immerse pretzels nuggets in baking soda and water mixture. Place on cookie sheet lined with parchment paper (Alternative: grease cookie
sheet) and sprinkle with coarse salt. Bake in preheated oven for 7 minutes or until light golden brown. Brush nuggets with melted butter.
