Cuban Black Beans Cuban Black Beans
Number of Servings: 8

Ingredients

    1 pound (2 cups) dried black beans sorted and rinsed
    1 large onion, chopped (1 cup)
    5 cloves garlic, finely chopped
    2 bay leaves
    1 can (14.5 oz) diced tomatoes, undrained
    5 cups water
    4 tablespoons chopped Jalapeno chilies
    4 teaspoons ground cumin
    2 tablespoons olive or vegetable oil
    1 1/2 teaspoons salt.

Tips

You can substitute chopped green chilies for the Jalapenoes to make it less spicy. Also you can add 1.5 cups chopped bell peppers.


Directions

Mix all ingredients into a 3.5 to 6 qt slow cooker.

Cover and cook on high heat for 6-8 hours or until beans are tender and most of the liquid is absorbed. Remove Bay leaves.

Serve over rice

Serving Size: Makes 8 3/4 cup servings.
