    1 1/2 c oats (regular, not instant/1-minute)
    8 oz (one regular package) mushrooms, sliced
    1 egg, beaten
    3 T olive oil
    3/4 c broth (veggie or chicken)
    2 T chopped parsley
    1/2 tsp basil
    1/2 tsp oregano
    1/4 tsp salt


Saute mushrooms in oil in skillet until almost tender. While that's going, combine oats & egg in bowl. Add mixture to mushrooms in hot skillet. Cook over medium heat, stirring constantly for 3-5 minutes, until oars are dry, separated & lightly brown. Add remaining ingredients; continue cooking, stirring occasionally, 2-3 minutes or until liquid evaporates.
