Ingredients

    1Tbsp Olive oil
    4 Scallions, sliced thin
    1 Celery Stalk, chopped
    4 cloves garlic
    2 tsp cumin
    1/8 tsp cayenne pepper
    pinch salt
    pinch pepper
    2 cans black beans
    15 oz can diced tomatoes with liquid
    1.5 cups chicken broth
    1 Tbsp lime juice

Directions

In pan, heat olive oil over medium heat.
Add scallions, celery, garlic, cumin, cayenne, salt, and pepper. Cook, stirring occasionally until veggies soften.
Add black beans, diced tomatoes, and chicken broth.
Bring to simmer and cook for 20-40 minutes.
Season with lime juice.

Serving Size: makes about 6 servings
